This wet-hopped pale ale, brewed annually following the fresh hop harvest in September, is the culmination of a great friendship between Hoyne Brewery and the Hope Bay Hop Farm on Pender Island. On one special day every year, volunteers gather to pick fresh, aromatic hops, which are used to brew a single batch of Wolf Vine the very next day, capturing the rawness and fragrant intensity of island life.

Proxima-B is an Earth-sized planet orbiting our nearest neighbour star, Alpha Centauri. Of course, we cannot directly see this planet, being 4.37 light years distant, but we do know it is there. What's more, it is in the "habitable zone", meaning it could support water, and therefore life. If you and I were standing on Proxima-B, enjoying a beer and gazing up at the night sky, we may not even notice our little Sun quietly burning away in a corner of the Galaxy, giving Earth life. Parallax. Shine on, beautiful Sun, Shine on.

Svec (Shoemaker) is our interpretation of the Czech answer to Anton Dreher’s famous amber hued Austrian lagers. This Polotmavy Lezak, which translates to ‘half dark’, balances multi notes of toffee, brittle and dark raisin bread with the unique spicy character of Saaz hops. Strikingly bold yet elegant and refined, it’s the beer described by J Peterman as “the perfect vehicle for striding along the cobblestone chicanes of Prague’s shoe district… Sturdy, handsome, luxurious.”

The efforts to make this as authentic as possible are remarkable: from Germany, we have imported Pilsner Malt from Durst Malts of the Hallertau region; we employ a specialized Kölsch yeast that ferments cool like a lager, but is actually a top-fermenting yeast, making it a true hybrid; we then age it cold in our cellar for a prolonged period of time, again like a lager. Technically speaking, Kölsch is an Ale – but this conventional Kölsch process, which dates back to the early 17th century, delivers a bright and clear beer, with a straw-yellow hue that is endlessly drinkable and a perfect addition to our line-up of pilsner-style beers.

I have been a fan of Hoyne's beer since they opened back in 2011 and have filled growlers and done tours several times over the years. in June 2015, we did another backroom tour, hosted by Master Brewer Sean Hoyne himself. Super entertaining and informative. I love the ability to actually go behind the store front and see the operation and personally hear the stories (and taste the beers of course). The tours are by donation to a locally supported charity and do need to be booked in advance as they run on an as-available schedule (amongst brewery operations and so on). Usually I can find 1 or 2 beers I like in any given brewery, but like some of my other favorite brewery's (Parallel 49, Feildworks), Hoyne's range of beers ALL seem to be good to superior. Dark Matter remains an insanely brilliant beer. Some exterior/interior pictures below of our last tour.

I introduced my partner to Dark Matter tonight believing he would really enjoy it. I am not a beer connoisseur and I don't like stout but Hoyle Brewing's Dark Matter is an amazing beer! My partner says he has now found his new favourite and will look for it whenever we are out or for just a nice thirst quencher at home. Way to go guys, although I've known of your amazing Dark Matter for a few years now I was so happy to introduce my guy to it. Then for his reaction to be so enormously positive I knew I needed to give a shout out to you. Well done, can't wait to go to Victoria to visit the brewery in person.
