Sartori Harvest Fresh Hop IPA, brewed only once a year, when in the midst of the annual hop harvest the fresh Centennial hops are harvested from Sartori Hop Ranch (near Chilliwack) and transported back across the Strait of Georgia to our brew kettle in Victoria within a 24-hr rush. When brewed in their natural form, the hop flowers are still sticky with raw oils and resins; imparting the coveted flavours and aromas of citrus, pine, and melon -which is best enjoyed as fresh as possible. We have been harvesting the same Centennial hops from the same plot of land since 2008, showcasing a delicious flavour profile unique to the growing region. Sartori Harvest IPA was also the very first IPA we brewed as Driftwood (Fat Tug IPA followed a year later!) and was a pioneer of the fresh hop beer movement in B.C.

Our interpretation of this Southern-Belgian farmhouse ale employs a long-grain bill and the addition of freshly-ground black pepper to the Brew Kettle. We use the versatile Ardennes yeast from Belgium, adding notes of bubblegum, banana and cloves to this Saison’s sturdy malt backbone. Food pairings: Walnuts, pecans, cheeses such as Trappist, Livarot, or Comte. Beef, venison, mussels. Root vegetables, resinous herbs (rosemary, marjoram, thyme). Great for brazing.

Brewed in the tradition of the artisan brewers of Leipzig, this rare style wheat beer is named after the Gose River whose slightly salty waters originally gave the beer its characteristic taste. This style went extinct twice Germany, but is today enjoying a revival in Leipzig and here in North America. Dry, tart, citrusy and deliciously refreshing on a hot summer’s day.

Style: IPA - New England / Hazy

OG Haze holds a balance of tropical fruit aromas, juicy hop character and soft malt body that elevates this hazy North Eastern IPA into the carefully crafted realm of distinction from Driftwood Brewery. For us what makes a NEIPA interesting and distinct is its reduced bitterness (compared to a West Coast IPA) and silky mouthfeel. We accomplished these by using a fairly small quantity of bittering hops and by using a lot of high-protein grains in the grist bill (un-malted oats and wheat). We added some green apple puree to the boil to set a pectin haze, and add a hint of viscosity and tartness. We also added a lot of late hops.

My husband and I have been to Driftwood several times now and I have to say it is the most welcoming establishment I've ever been to. To simply compliment their customer service would not properly convey the positive atmosphere there. Every (and I mean every) employee there is so kind and friendly which tells me it must be a great place to work. Happy employees are happy people who make happy customers! In fact, we spoke to a couple of other patrons who were very cheerful as well. We were served by Andrew who, when I couldn't decide what I wanted (I'm no beer expert) was able to gauge my taste and help me choose a fantastic flight which exceeded my expectations. He never interrupted us if we were deep in conversation yet appeared at the perfect moment when we were looking for another beer. Signs of a great server! Andrew educated us on the Czech Pilsner pour which initially I was skeptical of, but immediately enjoyed. How did he know?? He offered tastings of beers he thought we'd like and was so personable and non judgmental in teaching us about their brews. We also spoke to a couple of other servers and I wish I knew their names so I could give them a shout out too! Driftwood feels like the type of place you could go to if you were having a lousy day and needed some positive energy. Or maybe you're just lonely. Either way I'm certain the staff there would make you feel at home and I will continue to support this business and recommend it to everyone!

Such a fun atmosphere! We stopped in for some small bites and beers on Sunday evening and everything was GREAT!! We walked from downtown Victoria and it was a nice stroll (20-30 minute walk depending on the pace). After burning calories to get there, the food was 100/10 . They have an asian influenced menu with unique takes on typical street foods. The beer also good with some unique flavors. I personally enjoyed the raspberry sour and my husband enjoyed the cherry sour, both were tart and bursting with flavor. Not pictured is the Gin. We enjoyed both of their house gins and brought some home to enjoy with family. We did enjoy the pet friendly patio with our pup . The servers were all so lovely to our pup and provided a big bowl of water with ice for him and lots of treats. I would recommend since the patio is quite dense with dogs on occasion to ensure you pup is friendly and ok sitting next to other dogs for a period of time. You may want to consider bring something to occupy them depending on how long you plan to stay.

We were visiting from North Van and our friends recommended meeting here, saying it's "a fun little place with real cool servers". Huh. So we went. Food was great, drinks fantastic (I'm not a beer girl and had plenty to choose from). But the servers really were GREAT; accommodating, friendly, knowledgeable and proud of their offerings. I was interested in their gins, and so I received tasters. They were even happy to celebrate another local producer's aperitif. These folx made us feel really, really welcome and enhanced the already good experience exponentially. If they could bottle their culture, they'd have another product to sell.

I am a huge fan of Fat Tug, and I always visit Driftwood when I am in Victoria! This brewery is so nice and cozy with an amazing patio too! Staff are always super friendly and attentive!
