Style: Lager - Dortmunder / Export

Helios is the second pillar in our devotion to fine lagers, inspired by a nearly extinct style of beer originating in Dortmund, Ruhr Valley, Germany. A robust, malt forward, export strength lager that is complex yet subtle, Helios reaches maturity after four to six weeks of aging. As it ages, it improves, developing into a true classic, time honoured lager. It is always a favourite amongst our brewers!

Frank Appleton started it all. He dreamt up, then engineered and built BC’s very first Craft Brewery, the Horseshoe Bay Brewing Co. He then went on to build numerous other breweries, imparting wisdom to a generation of would-be brewers on how to become Brewmasters, Sean Hoyne included. Style: Pale Ale - American

This wet-hopped pale ale, brewed annually following the fresh hop harvest in September, is the culmination of a great friendship between Hoyne Brewery and the Hope Bay Hop Farm on Pender Island. On one special day every year, volunteers gather to pick fresh, aromatic hops, which are used to brew a single batch of Wolf Vine the very next day, capturing the rawness and fragrant intensity of island life.

Of all our beers, Gratitude is our most heartfelt and brewed with those close to us in mind. A style of beer that reaches back to the 15th century, this winter warmer is best in a snifter by a fire with someone you love by your side. We gather a group of friends every year to hand wrap each bottle. In honour of all those who make up our community, who add colour and meaning and spice to the lives of those around them, Sean wrote a prose piece; this year’s neck tag was designed so you can save it as a bookmark.

Style: IPA - New England / Hazy

Proxima-B is an Earth-sized planet orbiting our nearest neighbour star, Alpha Centauri. Of course, we cannot directly see this planet, being 4.37 light years distant, but we do know it is there. What's more, it is in the "habitable zone", meaning it could support water, and therefore life. If you and I were standing on Proxima-B, enjoying a beer and gazing up at the night sky, we may not even notice our little Sun quietly burning away in a corner of the Galaxy, giving Earth life. Parallax. Shine on, beautiful Sun, Shine on.

Our interpretation of a modern West Coast IPA, where classic flavors of citrus and pine sap intersect with contemporary IPA’s bright tropical juiciness and balanced bitterness. Pale malts provide a blank canvas for sticky spruce tips, pithy pomelo and pineapple jam.

Style: Lager - Polotmavé (Czech Amber)

Svec (Shoemaker) is our interpretation of the Czech answer to Anton Dreher’s famous amber hued Austrian lagers. This Polotmavy Lezak, which translates to ‘half dark’, balances multi notes of toffee, brittle and dark raisin bread with the unique spicy character of Saaz hops. Strikingly bold yet elegant and refined, it’s the beer described by J Peterman as “the perfect vehicle for striding along the cobblestone chicanes of Prague’s shoe district… Sturdy, handsome, luxurious.”

Style: Kölsch

The efforts to make this as authentic as possible are remarkable: from Germany, we have imported Pilsner Malt from Durst Malts of the Hallertau region; we employ a specialized Kölsch yeast that ferments cool like a lager, but is actually a top-fermenting yeast, making it a true hybrid; we then age it cold in our cellar for a prolonged period of time, again like a lager. Technically speaking, Kölsch is an Ale – but this conventional Kölsch process, which dates back to the early 17th century, delivers a bright and clear beer, with a straw-yellow hue that is endlessly drinkable and a perfect addition to our line-up of pilsner-style beers.

Is it civilized to stop whatever work you are doing between breakfast and lunch to enjoy a snack of bread, cheeses, perhaps a sausage, a pretzel with mustard, washed down with a delicious glass of Hefeweizen? The fine people of Bavaria certainly think so. They have been doing so for centuries. They even have a word for it: Brotzeit! I think we still have much to learn from our European friends! TASTE: A glass brimming with banana bread, vanilla, and subtle spice yet refreshing as a cool Alpine breeze. Golden, hazy and fortifying.
