Union Bhoys Lager was brewed in celebration of the Soccer Team Union St-Gilloise in Brussels, Belgium. This lager was brewed with both wheat and barley, giving it a hazy yellow colour. It has floral and melon fruit aromatics, with clean malt, honey dew, and lychee flavours followed by a dry, lightly bitter finish.

This collaboration with our friends from Twin Sails Brewing started one fateful night in the town of Dunham. We were lodged together in a house on a hill, for Brasserie Dunham’s Foudres Unis festival. After sharing a few beers, the plan for this collab was hatched! We departed from our usual base wort, opting to include Cara Aroma and Munich malts. After fermenting for 16 months in Spanish red wine barrels the resulting blend has medium acidity, bright red fruit notes, light wine tannin, and a dry finish.

Whoops’ origins lie in an error made in a batch of Union Bhoys many years ago. Too much wheat was added and a new beer was created. We did an aggressive dry hop with German Tettnang to give Whoops a bright hop bite with a menthol twinge. Be amazed at our mistakes!

This collab with our friends from Sea Change is the second of two beers we brewed together; both were produced using identical ingredients but different processes. This Mixed Fermentation blend was fermented in Italian Moscato Bianco and Chianti barrels for 14 months using a special blend of yeasts and bacteria. The result is bright white wine fruitiness and red wine depth with intense citrus and floral hop character. It has round texture with high acidity, and a juicy finish.

The Mimic is a Quick Turn Mixed Fermentation beer, fermented in stainless steel tanks for 4 months. Our use of the traditional Turbid Mashing process lends to full texture and flavour, while having a very low alcohol content. It is fermented with a special blend of Saccharomyces, Brettanomyces, Lactobacillus, and Pediococcus. This unique blend of organisms gives bright citrus and tropical fruit flavours and aromas, balanced by a round texture and medium acidity.

Ferry of the Damned is a Quick Turn mixed fermentation beer fermented in stainless steel tanks for 4 months. It was then re-fermented on Riesling Grape Pomace with the addition of a special blend of microorganisms for an additional 2 months. The time spent on the Riesling pomace adds subtle wine character with additional texture and complexity. Sojourn in Sicily is a Mixed Fermentation blend featuring unique characteristics imparted by Sicilian Marsala barrels. The beer fermented in the Marsala barrels for 20 months before being blended. This blend is the first led by our brewer Ian “Nar” Nawrot who has been with the brewery since the start. The result is a robust beer with subtle red berry and rose water aromatics, savoury walnut and maple flavours, which are amplified by a medium high acidity. We hope you like it!

Mix-Fermented in oak barrels. The Fruitful Pursuits Series is made in late summer when ripe fruit is in season and at peak quality. For 2019 Plum we used hundreds of kilograms of freshly harvested Damson and President Okanagan plums which stayed on this mixed-ferment blend for 2 months. The result is bright ruby-purple colour, very prominent plum character, and a medium-high acidity.

MIXED BARREL FERMENTATION Mentis Oculi is the second release in the Dry Hop Series. This blend of one and a half year mixed-ferment barrels is a collision of two worlds. It picks up subtle wine fruitiness and tannin from thebarrels and finishes with a delicate tart acidity.

What a beautiful special place! I just moved to the area and finally got to pop in and check out this incredible market, brewery, restaurant and shops in the beautiful, trendy up & coming Ritchie area at the 4 way stop. I hope to come back and take a wee tour on the Brewery side and maybe bring cameras and snap a few if permitted of course - I've heard amazing things about their craft beers! Not sure, I don't think they have a GF beer yet I look so forward to a date night, coming back and trying their steak I've heard is a must try!

This is a popular place, try to make a reservation first. I loved the room; bright, open and interesting. The beer was outstanding, I had the SPF 3.82 and recommend it. The food was also unique and over the top tasty. I found the food prices rather high, but they don't serve pub food here. The chef has taken local ingredients and, instead of going rustic, elevated them in interesting ways. I've never had SUNFLOWER SEED & RYE RISOTTO with 24 month Mimolette cheese and sunflower shoots before and boy am I glad I ordered it. Share the plates and savour them because, like the beer, the palate needs time to process what is going on.

The beer is pretty good, if you like sour beers. Not much variation if you don't like sours. There was no toilet paper in the bathroom and I let them know. Later, my partner went to a different bathroom, and no toilet paper. My friend went to the same bathroom I went to and very little toilet paper added in. Would be nice if they paid attention to all aspects of the brewery.

It's great to see something different. A must for anyone in the Edmonton Area. One of the more unique breweries with an excellent selection of beer and food. It's not your typical brewpub food but instead has a Belgium inspired twist which worked well with their beer. The beer is also served at the perfect temperature!
