It was then conditioned on generous amounts of blackberry, black currant, concord grape and a touch of lactose for a delicious, slightly sweet and creamy treat. This beer is our homage to the OG wine cooler that Spark’s founder—Andrea—drank back in the day.

A classic old world saison. 100% Ontario pilsner, Vienna and wheat malts make for a golden coloured, highly drinkable Belgian saison. Black pepper and stone fruit and citrus dominate, but a slight herbal, fruity hop note from the Styrian Golding and Saaz hops comes through on the finish.

The best dessert ever but in beer form! It's the glorious return of Black as Midnight on a Moonless Night in Nanaimo, British Columbia, Canada Nanaimo Bar Stout. We brewed this Double Dessert Stout with tons of toasted coconut, dark chocolate, graham crackers, lactose, and just the right amount of vanilla. It all comes together in a rich roasty stout with toasty coconut up front, balanced out by bitter chocolate, sweet lactose, and a boozy warmth. Literally a Nanaimo bar in a glass.

'Til Tuesday is a new series of blended beers including 18 month old barrel aged sour beer. This iteration was fermented with Italian Plums for a month before bottling. Slight oak and funk from the barrel aging leads into jammy plums. It's dry and effervescent and will leave you humming Aimee Mann songs in your head. This beer is one of our new favourites!

The second release from our oak foeder is Lulu, a porter-like beer that was fermented for six months with a blend of Belgian and Brettanomyces wild yeasts. It was then bottle conditioned all summer long. This black, rich beer has notes of oak, dark-roasted coffee, and English biscuits. A firm brett backbone and soft carbonation balance out the small amount of residual sugar. Perfect for sipping by the fire after a hard day of nothing much at all.

Great place for a quick drink if you're in Chinatown! Kind and attentive staff, nice drinks. We had their pizza by the slices last time we went (tasty) but it looks like they've updated to full pies now, however I imagine them to be just as good. Patio is cute, I appreciate their clean bathrooms as well!

Visited Spark Beer & Pizza in Chinatown on Thursday, and I was thoroughly impressed! The butter chicken pizza and garlic cheese fingers were absolutely deliciousa perfect balance of flavors that truly stood out. The innovation behind their menu is remarkable, and it's clear the cooks put a lot of thought and skill into their craft. I had been told this was one of the places in town I needed to try and my friends were 100% correct! Making a reservation on their website way really easy and I did get a reminder well in advance by email. The server was probably one of the best I've ever had. Everything she suggested was spot on. She got the pairings to perfection and she was extremely friendly. I can't say enough good things about her, my friend and I were truly impressed. The pizza was incredible. It was so good we ordered a second. The beer was amazing, the gin cocktail was delicious and refreshing and even bought some beer to bring home. Also, spinning some vinyl definitely made my night. Tears For Fears...what a way to get someone singing at their table! This is somewhere I need to make a second visit to.
