Style: Sour - Other

A mixed fermentation ale using lactobacillus. Its primary fermented with Lacto, then fermented out with our house yeast strain. Soured in the fermenter rather than a kettle sour. Dry hopped with Citra and Mosaic, the end result is an acidity reminiscent of tart lemon, with citrus aroma and flavours of stone fruit.

This brew features a dominant yeast profile reminiscent of spice, earth and pepper, with rustic flavors of wheat. Hopped with the Amarillo Hop, and fermented with a mixed culture of Sach & Brett Yeast from Escarptment Labs in Guelph, ON.

2017 Same grain bill, different yeast. Using WLP 500 (Monastery Ale) - Less fruity bubblegum and more balanced spice. Noble Saaz hops have been removed and replaced with German Hallertau Blanc, with a heavy hand of New Zealand Nelson Sauvin. 2016 Version A Belgian inspired pale ale. Hopped using Noble Saaz and New Zealand Nelson Sauvin hops. Brewed with a classic belgian yeast (WLP550 Belgian Ale), and belgian candi syrup, giving it the phenolic aromas and a slight burnt sugar flavor.
