Featuring our favourite experiment hop HBC-586 alongside the classic Citra, expect overwhelming notes of lychee, mango, and citrus. In true Irrational fashion, we also decided to switch up our yeast from Hydra to Foggy London this time around to experiment with.

Style: Lager - Japanese Rice

By frankensteining the most popular tea in Japan (sencha) and one of our favourite Japanese beer styles (Rice Lager) with a hint of dried mango, we had a challenge to balance all these delicate flavours. Expect rich mango, earthy, and herbal notes all backed by a crisp finish.

Style: Sour - Fruited

We’re back again with another fruit overload. Using a fairly standard base recipe, we opted to use a combination of pink guava and red prickly pear purees. The pink guava dominates with a tart tropical fruit punch profile while the red prickly pear adds some earthiness and complexity in the background. Post-fermentation we dry hopped with an ample dose of Mosaic to provide some depth of character to the finished product. Pink, hazy, and tropical fruit forward, we think we checked all the hype boxes with this release.

In case you weren’t aware by now, we thoroughly enjoy getting funky in the brewery. This release is a prime example of that and is a wonderful representation of layering different flavours. To get the chai essence in this concoction we steeped our own blend of green cardamom, cinnamon, black peppercorn, ginger, and clove in the wort after the boil was over. The masala mixture with a complex (at least in our mind) malt combo brings together the best of both worlds in spice and beer. Full bodied yet easy to go down with a restrained alcohol level, this one has complementary notes of chai masala, toffee, and chocolate.

Saison is one of the most underappreciated styles and we aim to change that stigma. The French Saison strain is well known for its dry finish with big pineapple esters and pepper phenols. To emphasize these notes, the natural thought is to incorporate the real thing. We turned our mind on autopilot and did just that. Autonomic Mind is our natural progression to spicing up a solid base saison with its natural counterparts. The pineapple hits hard, finishing dry and spicy, with a nuanced tingly numbness from the peppercorns.

‘Tis the season to have something that will warm up your belly and keep you jolly. Our Mole Stout is the perfect winter beer that is nothing short of decadent and packs a punch. We start with a full stout base fermented with English Ale II to provide a fuller smooth body with a hint of dark stone fruit esters. The true magic happens post-fermentation with plenty of support characters featuring ancho chiles, cacao nibs, and cinnamon sticks. Expect rich notes upfront of chocolate, chile, and cinnamon with supporting plum, earthy, and roasty flavours.

Where is the roast??? While dark beer season is right around the corner, we couldn’t think of a better way to ease everyone into it by releasing our coffee cream ale. Delicately balancing taste between a crushable crispy boi and a morning cup of joe. By “dry beaning” with whole coffee beans for a very short period, we were able to extract all the goodness without the green tannic bite. Expect roast, honey, and cream notes.

This pale ale is wonderfully balanced between malt, hop, and tea flavour. What a second… tea? Oh yeah buddy, we infused one of our favourite black tea blends from @BanffTeaCo into this beer. Our interpretation pays homage to the OG of craft beer with our own personal twist. Expect dark berry, floral, and pine notes with a solid malty backbone.

Our Cascadian Dark Ale uses an old-school combination of Chinook, Centennial, and Simcoe hops in a conscious effort to pay homage to the Republic of Cascadia. The malt profile provides enough body, toast, and sweetness to add balance without outshining the hop character. Expect pine, resin, biscuit, stone fruit, citrus, mild chocolate, and slight spicy notes.

Designed with intent to ease us all into the changing of the seasons, Shoulder Season is a hybrid style between an American Brown Ale and American Stout. We took our stout base recipe and scaled everything back to obtain a lighter malt character and flavour profile. This balanced malt bill allows for moderate flavours of coffee, dark chocolate, and nutty notes.

Big, bold, and unrelenting, this Rye IPA does not hold back. Look for a clean fermentation profile, light malt backbone, and an aggressive bombardment of hops. The hop profile was chosen specially to accentuate the rye malt with notes of grapefruit, pine, and fresh cut wood.

With the everchanging beer scene, gose (GOES-UH) is quickly becoming a crowd favourite. Kettle soured with our in-house harvested souring culture, provides a unique mosaic to the acidity. The key to dialing in the perfect gose is balancing the saltiness with the acidic bite. Lime zest and coriander seed are the supporting players rounding out the flavour profile. Expect sour, salty, and citrus notes.

The time has come to welcome the first beer brewed in our space! Saison is a broad style and can bring all sorts of complexity to the table. For our first iteration, we decided to keep our sanity somewhat in check and brew something balanced that really shows off the yeast character. The yeast fermented the wort bone dry leaving behind an estery and phenolic masterpiece. The malt and hops are here to play a supporting role giving the yeast room to shine. Expect dry, spice, and citrus notes.

Where do we draw the line? While style guidelines are designed to point brewers in the right direction, we believe they are nothing more than that; guidelines, not rules. Nothing new would ever come about without breaking the status quo and experimenting! While an XPA is somewhere blurred between the lines of a Pale Ale and IPA we decided to add another dimension by fermenting this one bone dry with an amylase enzyme. Our Brut XPA showcases an extremely light malt backbone with a balanced hop character. A dry profile with orange and stone fruit notes are displayed here.

Our modern interpretation on this classical style. We started a traditional malt bill and yeast strain but allowed our creativity to shine for the other ingredients in this beer. To increase depth and round out the flavour profile, we used a new world hop heavy hitter Cashmere and a hefty cold side addition of coconut flakes to bring out the subtle tropical notes. Expect light notes of Melon, coconut, and fruit salad.

The recipe is designed with intention for sensory analysis to learn the distinctive characteristics of single hop varieties. Great patio and bar on 124 St.! Atmosphere is welcoming and chill and the brews they have on tap are great! I loved the purple sour and I had so many pretzels! Definitely coming back here while patio season is in full swing!

Absolutely untouchable atmosphere and location and the beer and people are just as fantastic. Rotating taps with tonnes of variety and a well educated bar staff to make choosing something fun. They allow you to bring in outside food AND even better, they have pretzels from Zwicks and a variety of pies for sale as well. An anchor tenant every bit worthy of the premium and historic location. You do not want to miss out on Irrational!
