(That’s why we started a co-op - to be our own tough bosses!) Fun fact: Rage Against the Machine does a great cover of this song - so you can choose the version that resonates with you. This classic American Pale Ale has been a core part of our lineup since day one, with vibrant aromas and hoppy flavours of bright citrus and grapefruit notes, along with a subtle grainy sweetness. Its medium-bodied mouthfeel provides a satisfying, well-rounded texture that complements the beer's bold character. A mild pithy bitterness at the finish adds a layer of complexity and edge. This easy drinking IPA is brewed in partnership the Waterloo Cycling Club’s Trails Committee. A portion of the sales of this beer goes to maintain and grow this wonderful system of mountain bike trails. Subtle notes of pine and fruit from the Simcoe and El Dorado hops pay homage to the diversity of trees in the forest that the trails wind through and the light refreshing body and low alcohol make it the perfect post-ride beer.

Long before TWB had an actual brick & mortar location, when it was still a bit of hope and a dream, one of the founding worker-owners, Alex, asked for a new beer for her birthday. Being a bit of a forest nut, she wanted a beer with trees in it - and that's how our Ale-X Juniper Rye ESB came to be! To be fair, she expected a strong IPA with heavy pine notes - but the brewer took it in a totally different direction. That’s the lesson from this ale: Sometimes a little collaborative creativity lands us something better than any one of us could come up with on our own! A customer favourite from day one, Ale-X is a classic English-style ale. It's very approachable but unique, with a nice bread spice from the rye malt that balances the Juniper flavours. It’s a crisp, clear ale that pours a beautiful amber hue - perfect to share with a friend!

We’re bringing this rare style of German ale to this most German part of Canada. The name means “the people’s summer” in German and is brewed with healthy doses of barley, wheat, oats, local honey, molasses, and German Hallertau Blanc hops. The result is a crisp, easy drinking beer with floral hints of ginger and lemongrass.

This wet hop IPA is only brewed once a year using local hops picked fresh from the bine at Tavistock Hop Co. - a great local and family-owned hop farm. It is brewed with fifty pounds of whole-cone fresh Centennial hops which are added late in the boil to bring out that seasonal, fresh aroma. Fun fact about the 2024 batch - our brewer also added dry hops from the same harvest. This beer is a slightly hazy, light golden colour. It has a fresh hop aroma and a dry and slightly bitter finish.

We wanted to see what happens if we developed a recipe that maximized the flavour of Mosaic and Citra hops. So we developed a hop schedule that consists of one late addition to the boil and one very, very early addition to the mash. The result is a clean crisp beer full of grapefruit and melon.

Does this beer have milk in it? Not really. But it does have a healthy dose of the thing that makes milk sweet, namely lactose sugar. Unlike other sugars in beer lactose doesn’t ferment into alcohol and that’s what gives the beer a rich sweetness that compliments the subtle roasty coffee and chocolate flavours of the dark malts.

Came here September 1st. The beer was amazing and the service staff were amazing. I will say though the saxophone player (Cooper Rodek) was a bit arrogant and disrespectful considering I overheard him talking with his friends while they were cleaning up the stage area that someone had left $5 for him in his tip jar (it was a pay what you can situation) and making jokes about it with his friends saying how it was disrespectful. I'm not sure who this kid thinks he is but that's not a great attitude to have.

One of my favourite local spots. The folks that run this place are incredible people who care deeply about the community. Their beers are great and they have a selection of non-beer and non alcoholic options. They're also dog-friendly, which is a win in my books!

This place is my favorite. The perfect mix of a quality craft brewery with constantly rotating new taps, and a quirky bar. There are a lot of us that are local regulars who walk in for a pint or two. They're dog friendly, kid friendly, and community friendly which really does make TWB my favorite in KW.
