  • Infinity Mirror

    Style: IPA - Brett

    ABV: 6.5    IBU: 0

    It is made with barley malts, oats and wheat, and features Amarillo, Nelson Sauvin and Citra hops. It was fermented with brewer’s yeast as well as multiple strains of brettanomyces (a.k.a. brett, a wild yeast), and is a blend of batches aged 1-3 months in red wine barrels. It pours a hazy orange-gold with a lively head of foam. Tropical fruit aromas with hints of citrus and brett-influenced funk are at play, along with a touch of wine. Flavours are of ripe fruit, funk and red wine, with playful carbonation, restrained IPA bitterness, and a dry finish.

  • Shifting Sands: Peach

    Style: Sour - Fruited

    Shifting Sands is a sour golden ale that is in essence, the canvas for future editions of the beer. Each version of Shifting Sands will have a different treatment of varieties of fruit, and will re-ferment and age in barrels or foeders. The idea behind this project is to play with various fruit re-fermentation in a semi-constant environment, creating each time a balanced beer that both showcases the fruit used, and respects the base sour gold, Shifting Sands. The inaugural incarnation, Shifting Sands: Peach, had more than 500 kg of fresh peaches added to the oak foeder it was fermented and aged in. It was left to mature three months, with the intention of drying out the initial sweetness added by the fruit.

    The newest iteration of Halcyon Barrel House’s Shifting Sands is our sour golden ale refermented with 600 kgs of organic raspberries. The barrels for this blend, ranging from 3-10 months old, were selected for their soft acidity to balance the tartness of the fruit.

  • Waking Dreams

    Style: Sour - Other

    ABV: 6.5    IBU: 0

    Last fall we selected four barrels from our stock of young, lightly tart gold beer. which had been aged for three months. To each barrel we added a significant quantity of locally grown organic haskap, a small, dark blue berry. The barrels underwent a secondary fermentation and aging period over the winter, then were blended together for packaging and release this spring. Waking Dreams pours a deep cranberry colour, with light berry-pink foam that dissipates quickly. The aroma is of berries and wine, with a touch of fruit skins. The flavour is tart, with lots of juicy, berry wine character. Plenty of tannins round out the body. The beer finishes dry, with a pleasant, lingering taste of fruit skins.

  • Life Advice

    Style: Table Beer

    Originating in Belgium, table beers are low ABV, lighter-bodied ales or lagers traditionally consumed with dinner. Halcyon Barrel House brewmaster Bryce McBain sought to create the perfect table beer for occasions spent sitting with friends, sharing advice and talking about life. The result is Life Advice table beer, the third and latest offering from Halcyon Barrel House. Life Advice sits at a 3.5% ABV, and is fermented with saison yeast and a custom mixed culture of Ontario wild yeasts, along with lactic acid bacteria. It features a touch of Strisselspalt and Hersbrucker hops. True to Halcyon fashion, it is barrel aged and bottle conditioned. Life Advice pours a hazy straw gold with light foam lacing. The aroma is mild and fruity, with subtle peach and wine. A soft grain flavour plays in the background to a more dominant fruity yeast character. Just a bit of tartness contributes to its refreshing nature. Effervescent and barrel-kissed, this easy-to-enjoy saison finishes dry, and leaves you wanting more.

  • Parallel Realities

    Style: Farmhouse Ale - Saison

    Halcyon brewmaster Bryce met Will and Adam of Austin Beerworks years back at a microbiology course, and the idea was sparked of collaborating on a beer together: Parallel Realities is the realization of those plans. The concept of Parallel Realities is brewing two versions of a recipe created collaboratively: one made at Halcyon with ingredients characteristic of Canada, and the other at in Austin with ingredients native to Texas. The two renditions are intended to be parallel in heart and soul, thought and process. The Halcyon edition of Parallel Realities is made with organic raspberry leaf and hand-harvested lingonberries, as well as locally foraged scarlet beebalm and sumac. It was brewed at Halcyon in October 2017. Austin Beerworks will be releasing a made-in-Texas version of Parallel Realities later this year.

  • Shifting Sands: Cherry

    Style: Sour - Fruited

    Organic cherries are up as the feature fruit in this third rendition of Halcyon’s Shifting Sands. The base sour gold is aged in red wine barrels from six to twelve months. A select blend of these barrels was then aged on both tart Montmorency variety and dark sweet cherries for another six months. This one’s all cherry.

    Halcyon Barrel House focuses in on a new feature fruit, black currant, in this edition of the Shifting Sands Series. Shifting Sands Currant pours a deep pinkish-red, with soft pink foam that retreats quickly. The aroma is dominated by herbal, fruity and peppery black currant, echoed by a hint of wine.

  • Brett Friends Forever II

    Style: Wild Ale - American

    ABV: 8.5    IBU: 0

    Brett Friends Forever II is the second Brett pale ale collaboration between Bryce McBain of Halcyon Barrel House and Justin da Silva of Stone City ales. BFF the first was brewed at Stone City in the spring of 2015, showcasing Brett fermentation and two hop varieties, Wai-iti and Galaxy. The 2017 edition is 8.5% ABV and hopped liberally with Wai-iti and Azacca. Mixed fermentation of Saccharomyces and multiple Brett strains in red wine barrels define the character of the beer. Bottle conditioned, of course. BFF II Pours quite hazy, with ample fluffy foam. The aroma is all hops: orchard fruit, citrus, and all things tropical. No subtle undertones here, just hops. Flavour is equally hop-forward, with the orchard fruit leading the way, in a delightfully light body for a rather big beer. A pleasant alcohol warmth lingers, and the finish is dry, with mild bitterness.

  • 7 Years Bad Luck

    Style: IPA - Imperial / Double

    If you double HBH’s Brett I.P.A. Infinity Mirror what do you get? You get 7 Years Bad Luck. It is the 10th beer to be released from Halcyon Barrel House. 7 Years Bad Luck is 7.4 % double I.P.A. that is primary-fermented with brettanomyces. Organic Idaho 7 and Mosaic hops are new to the profile, which also includes Amarillo and Nelson-Sauvin. The aroma is freshly hoppy, with tropical fruit dominant, and lighter notes of grassy meadows and wildflowers. It tastes juicy, with ripe fruit, citrus and pine. The finish wicks with warming alcohol and hop bitterness.

    Year Two is a retrospective of the most well-aged, and most interesting fruited sours and saisons from Halcyon's second year of brewing. It includes Shifting Sands: Currant and Cherry, two different fruited versions of farmhouse saison Curse of Knowledge (lingonberry and baco noir grape), and a tripel as-yet unreleased from the barrel house. Think of it as our year-in-review highlight reel.

    We love dry beer at Halcyon, so making a Brut I.P.A. was right up our alley. We allowed for two full months of barrel fermentation with our house mix of brett to create a drying effect without enzymes, then dry-hopped with mosaic for an aromatic matrix of berries, fruit and funk.
