Washed Away by Sea is a wine barrel-aged Gose spiced with coriander seed and sea salt and our interpretation of the saline-tart beers of Leipzig. This beer gives us the platonic ideal of a perfect salt-preserved lemon slice; aromatically mouthwatering with citrus and pineapple, soft floral notes mid palate, and complex earthiness with a refreshing, saltwater finish to cleanse. Washed Away by Sea is a beer dedicated to younger days of being tossed in the Pacific; the taste of saltwater and exhilaration of catching the next wave.

A Farmhouse Near, is a biére de coupage of fresh saison hopped with Nelson Sauvin, and one 16-month aged barrel of saison with French Strisselspalt hops. This blend of pale-straw saison pours with a lively carbonation and aroma of fragrant black pepper. On the palate, A Farmhouse Near displays notes of gooseberry and Bosch pear, with a light brush of acidity and oak that finishes with a succinct, cleansing bitterness.

Oubliette of Staves is a saison aged in wine barrels for 14-18 months, displaying our quintessential saison profile of lime zest, hay and subtle Brettanomyces funk. The initial blend was two noteworthy barrels, one displaying a pillowy soft saison with delicate notes of vanilla spice, and the other a playfully acidic funky-lime saison. These harmonized for ten days after being blended with our largest barrel (a 600 litre Demi Muid from @rosewoodwine), bringing notes of goat-hay, tingly acid, and rounded oak body. This beer was then transferred over petals of wild yarrow foraged with Dr. Amy (@amyproulx78), bringing a subtle sage-brush herbaceous note to the mélange.

Washed Away by Sea II is a wine barrel-aged Gose that was partially spontaneously fermented, and spiced with coriander seed and sea salt. Washed Away By Sea II's inclusion of spontaneously fermented beer using a turbid mash, brings additonal stone fruit notes of dried apricot, and nuanced funk from ambient-aged Ontario-grown hops. Washed Away by Sea II continues to be a beer dedicated to younger days of being tossed in the Pacific; the taste of saltwater and exhilaration of catching the next wave.

Oubliette of Staves III has notes of dried flowers, graphite, cloves, and lime zest. This barrel-aged saison displays quintessential Belgian yeast character from Brasserie Blaughies, which is the basis from which our cellar culture grew and adapted within our barrels. Canadian cereal grains of barley, spelt and buckwheat, as well as French Aramis and German Perle hops were used, along with a mash regime to boost phenolic character. The result is a robust saison that was barrel-fermented and aged for 20 months with Brettanomyces to temper its young character into a mature saison of grace and elegance.

This saison was aged in Chardonnay wine barrels for more than one year, and refermented on local, whole blackcurrants grown in the Twenty Valley. Barrels of mature buckwheat saison with French hops displaying notes of lime zest and dried herbs form the base of this blend. The long rest upon blackcurrants brings forward the fruit’s signature acidity, bright berry notes and deep earthiness. Blackcurrants for Bells was inspired by the tradition of the Kir Royale cocktail, a mix of crème de cassis and white wine. On the nose and palate, it is everything we love about blackcurrants. We prefer to decant off the yeast and enjoy in a white wine glass.

Each Apricot Made Gold is an aged saison expressing ripe apricot flesh, with complex underlying notes of almond, marzipan, and Amaretto. We sourced several varieties of apricots from a single farm in Beamsville, Ontario, and ripened them all in our brewery for three days, requiring the happy but laborious task of turning each apricot by hand once a day. The combination of different varietals completes our platonic ideal of the perfect apricot flavour and aroma, while still remaining foremost a beer. Each Apricot Made Gold was blended from four unique recipes, brewed during our 2021 and 2022 brewing seasons, using barley, wheat, spelt, buckwheat and oats, with hops from Germany and New Zealand. After one to two years in barrels, our saison rested upon these whole apricots for three months, until it was bottled in late October, 2023.

Blackberries Shine Like Stars is an aged saison with a bone-dry Lambrusco character, and notes of fresh berries, violets, and bitter almond on the finish. We sourced these organic blackberries from our friend Blackberry Bob of Thimbleberry Farms in Beamsville, Ontario. His farm is a regular stop during our summer visits to wine country as we check in on the fruit and interpret the auguries of the weather and harvest ahead. Blackberries Shine Like Stars was brewed in late February and early March of 2021 with rye, coriander and grains of paradise, and then rested in Niagara wine barrels for 15 months. The barrel-aged saison was then refermented on whole blackberries for three months and conditioned in bottle.

Night and Day, Both Sweet Things is a saison aged in wine barrels for one year, and then rested on second-use appassimento grapes and Montmorency sour cherries. This beer is inspired by Provence-style, pale, dry rosé wines. We aged this blend on 130 grams of appassimento Cabernet Franc grapes per litre of finished beer to develop the blush colour and lightly tannic structure of a rosé wine. After two months on grape skins, we transferred the beer onto second-use Montmorency sour cherries, that displayed an exemplary aroma of our Brettanomyces house culture – bright citrus and dried flowers without the spicy phenolics that would flaw a wine.

Acres of the Mind is a witbier infused with sweet orange, coriander seed, and chamomile flowers, and aged in oak barrels for three years with our house culture. Acres of the Mind has the aroma of a wood cellar filled with drying orange peel. The flavour has a bright citrusy punch, a brush of complex acid, and herbaceous oak, with a dry, cleansing finish reminiscent of Aperol Spritz.

Made in the piquette tradition for workers in a winery, Golden Plum is a spritz that's been produced from a wash of pure reverse osmosis water on Twenty Valley plums that fermented with barrel-aged saison. We make this low-alcohol beer at just 0.7% as a refreshing beverage to drink while working in the brewery. Golden Plum has subtle notes of tart plum, sweet tart candy, and oaky vanilla derived from its parent saison, and coupled with a foamy head, spritzy carbonation and cleansing acidity. We reach for this when seeking the complex flavours of our house Brettanomyces with minimal alcohol.

We stumbled upon this gem by accident last night. What a find! The range of beers available is thoughtfully collated and inspired. No spirits or soft drinks this is all about beer (and one cider). Service was professional and knowledgeable. I can't say enough good things. An outstanding addition to Dundas.

We stopped in for a drink a few weeks ago at this nice craft brewery in Dundas. They have some excellent tasting beers with some interesting flavours. I bought one to bring home and share. Very nice spot in downtown Dundas. The servers are very friendly and helpful in selecting a drink. We will definitely come back again soon.

I really don't know how to review this place. I don't like leaving bad reviews for small businesses, especially craft breweries. The beer/ciders taste quite unique and are not for everyone. I was mostly displeased because the menu makes it look like the pours are 500ml or a pint. They are not. So the prices are around $8-9 for 250ml. That's extremely steep. I wish the menu was more transparent. As an upside the new food menu looks very good. But unfortunately I won't be returning.

UPDATE: Barrel Heart has a great new(er) taproom in downtown Dundas! It's still the same great beer and service, but much more space and a dog-friendly patio! As a creature of habit, I had Cherries aged like grace again - I'll try to branch out the next time. Thanks, Mark! August 31, 2024 C & J ORIGINAL REVIEW: Fantastic experience at Barrel Heart! Met and chatted with the proprietor, Mark, who, with his wife, run the brewery. His passion for and knowledge of brewing is very clear. Indeed, he is part of Niagara College's brewing program faculty. Of course, the hughlight is the beer. Even with the wide proliferation of small craft breweries, the oak barrel aged brews are a rarity. The aging process is more akin to wine making. The back "wall" of the taproom is an imposing stack of oak barrels. Even the bar is fashioned from barrel staves. Between us, we had the raspberry ("The Raspberry Pact") twice, cherry ("Cherries aged like Grace"), and the Oubliette. The Raspberry Pact is amazing, and some came home with us. To be fair, they were all great, especially the Oubliette. I'm already looking forward to a return visit! Thanks, Mark, for the outstanding brews!

My wife and I have been buying their beers for a few years now, so it's been really exciting to watch them go into this beautiful new taproom! It's a gorgeous space right in the heart of Dundas with tons of natural light coming in. Excited that they'll have a patio this summer. The drinks were amazing and truly unique as always. Excited to come back soon!
