II: We’ve been brewing Abbey Dubbel around this time of year for several seasons now - it’s been a warming winter beer that gives us some comfort when the light fades at five o’clock. And as we shift and mature, so too does our beer, and this year’s edition of Abbey Dubbel is decidedly more complex and classic. A characterful yeast strain and a touch more natural carbonation round this beer out with pronounced notes of allspice, toffee and raisins, a soft mouthfeel and high drinkability layered on a mahogany palette made for sipping by the fire.

I: Of the Trappist-inspired styles, Singel is probably the least produced – which is not to say it’s not great – rather, the style, sometimes referred to as Patersbier (as in, Father’s beer), was often only consumed at the monastery, often by the monks themselves as they would go about their daily tasks. Lower in alcohol content, Singel still delivers the expected spice and fruit character one might expect of an abbey-style beer while still being refreshing and dry.

IV: Quadrupel is the very pinnacle of Trappist-inspired brewing: beer is pushed to its upper limits of strength, flavour and complexity. The brewhouse, too, is pushed – both brewer and equipment straining under the mass of grain and labour it takes to make a beer so bold. And with the yield being limited, the liquid is deeply prized. Such is the case with some of the must elusive Trappist Quad beers of the world, and too with Abbey Quad. A rich, thoughtful sipper, the beer is itself a meal, a dessert perhaps, lingering with warming notes of clove, fig, banana bread and plum, thoroughly enjoyable through the deep nights of December, long as they wane.
