This India Pale Ale is unabashedly hoppy, with a grapefruit-like aroma due to a large addition of hops directly to the final tank (a process called “dry hopping”). A firm, toasted malt presence forms the background for all these hops lending balance so it’s not just a one note symphony.

Like the Kölsch beer that makes Cologne famous, our St. James Pale Ale is a medium bodied blonde brew that’s soft on the palette with a malty finish. Restraint is shown by our hop loving brewers as they add four additions to achieve low bitterness and a floral finish. Slow fermentation gives this beer its smooth fruity flavour that makes us say “yes, we’d gladly have another!”

Our Imperial Stout is a decadent ode to the art of brewing. Malted & roasted barley come together with a heaping dose of crystal and chocolate malts to form the jet black body. Columbus hops form the bitter backbone and a slow fermentation leads to a smooth finish. The beer is then aged for 6 months plus in freshly emptied Bourbon barrels. The barrel aging adds in a complexity of brown sugar and vanilla notes along with a slight interplay of oxygen that would be impossible to achieve without this expensive and time consuming process. The result is a thick, rich Stout that should be served at 14 C. in a brandy glass with a side of your favourite dark chocolate. Unfiltered.

Brewed in the monastic tradition, bock beers were meant to sustain the body during long fasts required for religious celebrations. This is where the term “liquid bread” comes from, literally meaning big, chewy malt heavy beers were savoured during these times and kept the brothers in sound condition. Our version is thickly malty due to our use of a decoction mashing process (a first for Half Pints!), meaning a portion of the main mash is boiled for an extended period and then re-introduced, leading to an explosion of malty, caramel flavours. We’ve kept a traditional low hopping, and a long lagering phase to smooth out any rough edges, making this the perfect beer for all our malt-loving fans out there.
