  • Classic Pilsner

    Formerly known as Pils. An alpine lager brewed with enough heft to survive an expedition, this is the more muscular sibling to our house pilsner. It pours a snow-capped gold with a hoppy nose featuring spicy aromatics and a dusting of citrus and grass. On the palate, it packs in malty notes of crusty bread and dark honey supported by high notes of orange zest and white grape. Robust but deeply refreshing, it will keep you warm at the top of the mountain and quench your thirst back at the lodge.

    Formally known as Nightfall. Sometimes things are not quite as they seem! Nightfall is the colour of a moonless evening but as smooth and refreshing as your favourite lager. Dense and layered aromas of toffee, pumpernickel and touch of cocoa foreshadows a palate that balances rich flavours of coffee cake and toasted hazelnut with a crisp and refreshing body. A fantastic pairing for cold-weather dishes like stews and roasts, or a thirst-quenching reward after a rosy-cheeked hike.

    Smoked Lavender Sour Inspired by ancient styles in the North of Germany, Selene is a beautiful fusion of floral and lightly smoked notes, with an amazingly refreshing acidity. Ontario Malt was hand-smoked in house by our brewing team, using a combination of local applewood, and lavender from our roof. Additional lavender from Toronto gardens was used late in the process to create the elegant aroma that dominates this beer.

    Made with hundreds of marigolds from the Avling rooftop and orange wine skins from Trail Estate in PEC, Orpheus is a beer that’s 16 months in the making. Orpheus tastes like citrus and Springtime, the delicate floral aromas intertwining with the tangerine and marmalade notes. It has a subtle black pepper backbone, along with fine tannins that bring just enough bite and structure to the fluffy, elegant palate of the beer. It's tart, refreshing and light, and drinks like a beautiful natural orange wine.

    1000lbs of Ontario peaches were paired with 3 blended puncheons selectively chosen for their subdued acidity, minerality, and solid expressions of funk. On the nose, intense aromas of peach puree and peach cobbler. Flavours of, you guessed it, more peach with a wonderful backbone of farmhouse and barnyard funk. A whisper of almonf and biscuity peach pie crust on the finish. Spritzy and bubbly, like cava, mouth-puckering and complex like a sour.
